  • 1 32 oz bag frozen tater tots
  • 1 lb breakfast sausage pork, turkey, or plant-based
  • 8 large eggs
  • 1 cup whole milk or heavy cream for extra richness
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese or pepper jack for spice
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • ½ teaspoon dried oregano optional
  • Optional Add-Ins:
  • ½ cup bell peppers diced
  • ½ cup onions diced
  • ½ cup mushrooms sliced
  • ½ cup spinach chopped
  • ½ teaspoon red pepper flakes for heat
  • Garnishes:
  • Fresh parsley or green onions chopped
  • Sour cream or hot sauce for serving

Instructions
 

  • Step 1: Preheat & Prepare
  • Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with non-stick spray or butter.
  • Step 2: Cook the Sausage & Veggies
  • In a large skillet over medium heat, cook the breakfast sausage, breaking it apart with a spoon until browned and cooked through (about 5-7 minutes). Drain excess grease.
  • If using vegetables like bell peppers, onions, or mushrooms, add them to the skillet and sauté for 2-3 minutes until softened.
  • Step 3: Make the Egg Mixture
  • In a large mixing bowl, whisk together eggs, milk, garlic powder, onion powder, paprika, black pepper, salt, and oregano until smooth.
  • Step 4: Assemble the Casserole
  • Spread the cooked sausage (and veggies, if using) evenly in the prepared baking dish.
  • Sprinkle half of the shredded cheese over the sausage layer.
  • Arrange the frozen tater tots in a single layer on top.
  • Pour the egg mixture evenly over the tater tots.
  • Sprinkle the remaining cheese on top.
  • Step 5: Bake the Casserole
  • Cover with foil and bake for 30 minutes.
  • Remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and the eggs are set.
  • Let the casserole rest for 5 minutes before slicing.
  • Step 6: Garnish & Serve
  • Garnish with chopped parsley or green onions.
  • Serve warm with sour cream, hot sauce, or ketchup.

Notes

Make-Ahead Option: Assemble the casserole the night before, cover, and refrigerate. Bake the next morning as directed.
Storage: Store leftovers in an airtight container in the fridge for up to 4 days. Reheat in the oven at 350°F (175°C) for 10 minutes or microwave in 30-second intervals.
