Soft & Fluffy Donut Cake – A Deliciously Sweet Treat

Ingredients
  

  • For the Cake:
  • 2 ½ cups 315g all-purpose flour
  • 2 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ cup 113g unsalted butter, softened
  • 1 cup 200g granulated sugar
  • ½ cup 100g brown sugar
  • 3 large eggs
  • 1 cup 240ml buttermilk
  • 1 tbsp vanilla extract
  • For the Sugar Coating:
  • ¼ cup 56g melted butter
  • ½ cup 100g granulated sugar
  • 1 tsp ground cinnamon
  • For the Glaze Optional:
  • 1 cup 120g powdered sugar
  • 2 tbsp milk
  • ½ tsp vanilla extract

Instructions
 

  • Step 1: Prepare the Oven & Pan
  • Preheat your oven to 350°F (175°C).
  • Grease and flour a Bundt pan (or round cake pan) to prevent sticking.
  • Step 2: Mix Dry Ingredients
  • In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon. Set aside.
  • Step 3: Cream Butter & Sugar
  • In a large mixing bowl, beat butter, granulated sugar, and brown sugar until light and fluffy (about 2 minutes).
  • Add eggs, one at a time, mixing well after each addition.
  • Step 4: Combine Wet & Dry Ingredients
  • Stir in vanilla extract.
  • Alternate adding the dry ingredients and buttermilk, beginning and ending with the dry ingredients. Mix until just combined—do not overmix.
  • Step 5: Bake the Cake
  • Pour the batter into the prepared pan and smooth the top.
  • Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean.
  • Step 6: Cool & Add Sugar Coating
  • Let the cake cool in the pan for 10 minutes, then transfer to a cooling rack.
  • Brush melted butter over the warm cake and sprinkle the cinnamon-sugar mixture evenly over it.
  • Step 7: Add Optional Glaze
  • Mix powdered sugar, milk, and vanilla extract to make a smooth glaze.
  • Drizzle over the cake once it has completely cooled.
  • Step 8: Serve & Enjoy!

Notes

Buttermilk Substitute: If you don’t have buttermilk, mix 1 cup of milk with 1 tbsp vinegar or lemon juice and let sit for 5 minutes.
Storage: Store in an airtight container at room temperature for up to 3 days or refrigerate for up to 5 days.
Freezing: Wrap slices tightly and freeze for up to 3 months.
