Ingredients
  

  • For the Cake:
  • 2 ½ cups 310g all-purpose flour
  • 2 ½ tsp baking powder
  • ½ tsp salt
  • 1 cup 226g unsalted butter, softened
  • 2 cups 400g granulated sugar
  • 4 large eggs
  • 1 tbsp vanilla extract
  • 1 cup 240ml whole milk
  • Red yellow, and blue food coloring (for a layered effect)
  • For the Buttercream Frosting:
  • 1 cup 226g unsalted butter, softened
  • 4 cups 480g powdered sugar
  • 3-4 tbsp 45-60ml milk or heavy cream
  • 1 tbsp vanilla extract
  • Gel food coloring red, black, blue, yellow
  • For Decoration:
  • Black fondant for outlines
  • White fondant for Pokémon eyes/details
  • Edible Pokémon character toppers or printable cake images

Instructions
 

  • Step 1: Prepare the Cake Batter
  • Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
  • In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  • In a large mixing bowl, beat the butter and sugar together until light and fluffy (about 2-3 minutes).
  • Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  • Alternate adding the dry ingredients and milk, beginning and ending with the flour mixture. Mix until just combined.
  • Divide the batter into three bowls. Color each portion red, yellow, and blue with food coloring.
  • Step 2: Bake the Cakes
  • Pour each colored batter into the prepared pans, layering them as desired. Use a toothpick to gently swirl for a marbled effect.
  • Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  • Let cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  • Step 3: Make the Buttercream Frosting
  • Beat the butter in a large bowl until creamy. Gradually add powdered sugar, one cup at a time.
  • Mix in vanilla extract and 3 tbsp of milk. Add more milk if needed for a smooth consistency.
  • Divide the frosting into portions and tint with Pokémon colors: red, blue, yellow, and black.
  • Step 4: Assemble & Decorate the Cake
  • Place one cake layer on a cake board. Spread a layer of buttercream, then place the second cake on top.
  • Frost the entire cake with a thin crumb coat. Chill for 15 minutes.
  • Apply a final layer of colored frosting.
  • Use black fondant or buttercream to outline Pokémon designs. Add white fondant for eyes and details.
  • Finish with edible Pokémon toppers or cake decorations.
  • Step 5: Serve & Enjoy!
