Ingredients
  

  • For the Mexican Pizza
  • 4 large flour tortillas or corn tortillas for a crispier version
  • 1 cup refried beans canned or homemade
  • ½ pound ground beef or ground turkey for a lighter option
  • 1 tablespoon taco seasoning store-bought or homemade
  • ¼ cup water
  • 1 cup shredded cheese Mexican blend, cheddar, or Monterey Jack
  • ½ cup enchilada sauce or taco sauce
  • Toppings Optional but Recommended
  • ½ cup diced tomatoes
  • ¼ cup sliced black olives
  • ¼ cup sliced green onions
  • ¼ cup sour cream for drizzling or dipping
  • 1 tablespoon chopped cilantro for garnish
  • ½ cup guacamole optional

Instructions
 

  • Step 1: Preheat the Oven
  • Preheat your oven to 400°F (200°C). If using an air fryer, set it to 375°F (190°C).
  • Step 2: Cook the Ground Beef
  • Heat a skillet over medium heat. Add the ground beef and cook until browned, about 5-7 minutes.
  • Drain any excess fat, then stir in the taco seasoning and ¼ cup water. Simmer for another 2-3 minutes until well combined. Remove from heat.
  • Step 3: Prepare the Tortillas
  • Place the tortillas on a baking sheet and lightly spray or brush them with oil.
  • Bake in the oven for 5 minutes per side, or until they are crispy. (Alternatively, air fry for 3-4 minutes per side.)
  • Step 4: Assemble the Mexican Pizza
  • Spread ¼ cup of refried beans on two of the crispy tortillas.
  • Evenly distribute the cooked ground beef over the beans.
  • Place another tortilla on top to create a "pizza" layer.
  • Spread 2-3 tablespoons of enchilada sauce over the top tortilla.
  • Sprinkle ½ cup of shredded cheese evenly over each pizza.
  • Step 5: Bake the Pizzas
  • Return the assembled pizzas to the oven and bake for 8-10 minutes, or until the cheese is melted and bubbly.
  • Step 6: Add Toppings & Serve
  • Remove from the oven and let cool slightly.
  • Top with diced tomatoes, olives, green onions, cilantro, sour cream, and guacamole as desired.
  • Slice into quarters and serve warm!

Notes

Crispier Option: Use corn tortillas instead of flour for a crunchier texture.
Vegetarian Variation: Swap the ground beef for black beans, grilled veggies, or soy crumbles.
Spice It Up: Add jalapeños or hot sauce for extra heat.
Make Ahead: Cook the beef and crisp the tortillas ahead of time for a quick assembly later.
