Ingredients
  

  • For the Salad:
  • 1 lb 450g cooked shrimp, peeled, deveined, and chopped
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • ½ cup red bell pepper diced
  • ¼ cup red onion finely chopped
  • ½ avocado diced
  • ¼ cup fresh parsley or cilantro chopped
  • ¼ cup feta cheese optional
  • For the Dressing:
  • 3 tbsp olive oil
  • 1 tbsp lemon juice freshly squeezed
  • 1 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions
 

  • Step 1: Prepare the Shrimp
  • If using raw shrimp, boil them in salted water for 2-3 minutes until they turn pink. Drain and rinse under cold water. Chop into bite-sized pieces if desired.
  • Step 2: Prepare the Vegetables
  • Chop the cherry tomatoes, cucumber, red bell pepper, red onion, and avocado. Finely chop the fresh parsley or cilantro.
  • Step 3: Make the Dressing
  • In a small bowl, whisk together olive oil, lemon juice, apple cider vinegar, Dijon mustard, garlic powder, salt, and black pepper.
  • Step 4: Assemble the Salad
  • In a large mixing bowl, combine shrimp, cherry tomatoes, cucumber, red bell pepper, red onion, avocado, and parsley. Pour the dressing over the salad and toss gently to coat.
  • Step 5: Serve
  • Sprinkle with feta cheese if using. Serve immediately or refrigerate for 15-20 minutes to let the flavors meld.

Notes

Use pre-cooked shrimp for a quicker prep time.
Add a little honey to the dressing for a touch of sweetness.
