Ingredients
  

  • For the Seafood:
  • ½ pound shrimp peeled and deveined
  • ½ pound calamari cleaned and sliced into rings
  • ½ pound lump crab meat or imitation crab, shredded
  • 1 teaspoon salt
  • 1 teaspoon lemon juice
  • For the Salad:
  • 1 cup cherry tomatoes halved
  • ½ cup red onion thinly sliced
  • 1 cup cucumber diced
  • ½ cup celery chopped
  • ½ cup red bell pepper diced
  • ¼ cup black olives sliced
  • ¼ cup fresh parsley chopped
  • For the Dressing:
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey optional
  • 1 clove garlic minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon crushed red pepper flakes optional

Instructions
 

  • Step 1: Cook the Seafood
  • Bring a medium saucepan of water to a boil and add 1 teaspoon salt.
  • Add shrimp and calamari and cook for 2-3 minutes, until shrimp turn pink and calamari becomes opaque.
  • Drain immediately and rinse under cold water to stop cooking.
  • Pat dry and toss with 1 teaspoon lemon juice.
  • Step 2: Prepare the Salad
  • In a large bowl, combine cherry tomatoes, red onion, cucumber, celery, red bell pepper, black olives, and parsley.
  • Add the cooked shrimp, calamari, and lump crab meat.
  • Step 3: Make the Dressing
  • In a small bowl, whisk together olive oil, lemon juice, red wine vinegar, Dijon mustard, honey, garlic, salt, black pepper, and red pepper flakes.
  • Pour the dressing over the salad and toss gently to combine.
  • Step 4: Chill and Serve
  • Cover the salad and refrigerate for at least 30 minutes before serving to enhance the flavors.
  • Serve chilled, garnished with extra parsley and lemon wedges if desired.

Notes

For added flavor, marinate the seafood in the dressing for 10 minutes before mixing it with the salad.
You can substitute scallops or lobster for a more luxurious version.
If using frozen seafood, ensure it is fully thawed and patted dry before cooking.
Adjust spice levels by adding more or less crushed red pepper flakes.
