Crockpot Buffalo Chicken Dip

Ingredients
  

  • 2 cups cooked shredded chicken rotisserie or boiled
  • 8 oz cream cheese softened
  • 1 cup buffalo sauce Frank’s RedHot recommended
  • 1 cup ranch dressing or blue cheese dressing
  • 2 cups shredded cheddar cheese divided
  • ½ cup shredded mozzarella cheese
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika optional
  • 1 tablespoon chopped green onions or parsley for garnish
  • Optional for Serving:
  • Tortilla chips
  • Celery sticks
  • Carrot sticks
  • Crackers

Instructions
 

  • Prepare the Chicken:
  • Shred cooked chicken and place it in a large bowl. If using rotisserie chicken, remove the skin and shred the meat with two forks.
  • Mix the Ingredients:
  • In the slow cooker, add cream cheese, buffalo sauce, ranch dressing, garlic powder, onion powder, and smoked paprika. Stir to combine.
  • Add the Chicken and Cheese:
  • Add shredded chicken, 1 ½ cups of cheddar cheese, and all of the mozzarella cheese. Mix everything until well combined.
  • Cook the Dip:
  • Cover and cook on low for 2-3 hours or high for 1 hour, stirring occasionally until everything is melted and combined.
  • Add the Final Cheese Layer:
  • Sprinkle the remaining ½ cup of cheddar cheese on top and cover for another 10-15 minutes until the cheese melts.
  • Garnish and Serve:
  • Stir the dip well, then garnish with chopped green onions or parsley. Serve warm with tortilla chips, crackers, or fresh veggies.

Notes

Make Ahead: You can mix all the ingredients ahead of time and refrigerate overnight. When ready to serve, just cook in the Crockpot.
Storage: Store leftovers in an airtight container in the fridge for up to 4 days. Reheat in the microwave or slow cooker.
Spicy Level: Adjust the buffalo sauce amount to control the spice. Add extra hot sauce for more heat!
Cheese Variations: Try using pepper jack or blue cheese crumbles for extra flavor.
