  • ¾ cup powdered sugar

  • ¼ cup whole milk

Instructions
 

  • Step 1: Prepare the Dough
  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, sift together flour, cornstarch, baking powder, and salt. Set aside.
  • In a large mixing bowl, cream the butter and powdered sugar together until light and fluffy.
  • Beat in the eggs, vanilla extract, and milk until well combined.
  • Gradually add the dry ingredients into the wet ingredients, mixing until a smooth dough forms.
  • Step 2: Roll & Cut the Dough
  • Lightly flour a surface and roll out the dough to ⅛-inch thickness.
  • Use a sharp knife or cookie cutter to cut the dough into thin rectangles or circles.
  • Place the cut wafers onto the prepared baking sheet, leaving a ½-inch space between each.
  • Step 3: Bake the Wafers
  • Bake for 8-12 minutes, or until the edges turn lightly golden.
  • Remove from the oven and transfer to a cooling rack to cool completely.
  • Step 4: Assemble (Optional)
  • If adding a filling, spread chocolate ganache, Nutella, or buttercream frosting onto one cookie and top with another to create a sandwich.
  • Let the cookies set for about 15 minutes before serving.

Notes

For extra crispiness, allow the cookies to cool completely before storing.
Store wafers in an airtight container at room temperature for up to 1 week.
To keep them extra crunchy, place a paper towel in the container to absorb moisture.
