Chicken Broccoli Alfredo Recipe

Ingredients
  

  • For the Pasta:
  • 12 oz fettuccine or any pasta of choice
  • 4 cups water for boiling
  • 1 tsp salt
  • For the Chicken & Broccoli:
  • 2 tbsp olive oil or butter
  • 2 boneless skinless chicken breasts, diced
  • 1 tsp garlic powder
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tsp Italian seasoning
  • 2 cups broccoli florets
  • For the Alfredo Sauce:
  • 2 tbsp butter
  • 3 cloves garlic minced
  • cups heavy cream
  • 1 cup whole milk
  • 1 cup Parmesan cheese grated
  • ¼ tsp nutmeg optional
  • ½ tsp salt adjust to taste
  • ½ tsp black pepper

Instructions
 

  • Step 1: Cook the Pasta
  • Bring a large pot of salted water to a boil.
  • Add the pasta and cook according to package instructions until al dente.
  • Reserve ½ cup of pasta water, then drain and set aside.
  • Step 2: Cook the Chicken & Broccoli
  • Heat olive oil (or butter) in a large skillet over medium-high heat.
  • Add diced chicken, season with garlic powder, salt, pepper, and Italian seasoning, and cook for 5-6 minutes until browned and fully cooked.
  • Add broccoli florets to the skillet and sauté for another 3-4 minutes until tender but still vibrant green. Remove from the pan and set aside.
  • Step 3: Make the Alfredo Sauce
  • In the same skillet, melt butter over medium heat. Add minced garlic and sauté for 30 seconds until fragrant.
  • Pour in heavy cream and milk, stirring continuously. Let it simmer for 2 minutes.
  • Stir in Parmesan cheese, nutmeg (if using), salt, and black pepper. Continue stirring until the sauce thickens (about 3-4 minutes).
  • If the sauce is too thick, add a bit of reserved pasta water until desired consistency is reached.
  • Step 4: Combine Everything
  • Add the cooked pasta, chicken, and broccoli to the skillet. Toss everything together to coat in the sauce.
  • Cook for 1-2 minutes on low heat, ensuring everything is well-mixed.
  • Step 5: Serve & Enjoy!
  • Remove from heat, garnish with extra Parmesan cheese and black pepper.
  • Serve immediately and enjoy your creamy Chicken Broccoli Alfredo!

Notes

You can substitute heavy cream with half-and-half for a lighter version.
For extra protein, use grilled chicken or add cooked shrimp.
Want a healthier twist? Use whole wheat pasta or zucchini noodles.
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat on the stovetop with a splash of milk.
