Ingredients

  • 2 cups cooked shredded chicken grilled or boiled
  • 4 cups romaine lettuce chopped

  • ½ cup black beans rinsed and drained
  • ½ cup corn fresh or canned
  • ¼ cup red onion finely chopped
  • ¼ cup cotija or feta cheese crumbled
  • ¼ cup fresh cilantro chopped
  • 1 jalapeño sliced (optional)
  • For the Dressing:
  • ¼ cup Greek yogurt or sour cream
  • 2 tbsp mayonnaise
  • 1 tbsp lime juice freshly squeezed
  • 1 tsp olive oil
  • ½ tsp cumin
  • ½ tsp chili powder
  • ½ tsp garlic powder
  • Salt and pepper to taste
  • Optional Toppings:
  • Tortilla strips or crushed tortilla chips
  • Lime wedges for serving
  • Extra cilantro for garnish

Instructions
 

  • Step 1: Cook and Shred the Chicken
  • If using raw chicken, season with salt and pepper and cook it in a skillet over medium heat for about 6-7 minutes per side until fully cooked. Let it rest for 5 minutes, then shred with two forks.
  • Step 2: Prepare the Dressing
  • In a small bowl, whisk together Greek yogurt (or sour cream), mayonnaise, lime juice, olive oil, cumin, chili powder, garlic powder, salt, and pepper until smooth. Set aside.
  • Step 3: Assemble the Salad
  • In a large mixing bowl, combine shredded chicken, romaine lettuce, cherry tomatoes, avocado, black beans, corn, red onion, cheese, cilantro, and jalapeño (if using).
  • Step 4: Add Dressing & Toss
